Chiang Mai definitely will be part of a next itinerary when coming to Thailand. It's much smaller and friendlier than Bangkok, with a more open layout and no pollution to speak of. It has even more wats than Bangkok.
The main attraction in Chiang Mai are the markets. The weekend market is huge and covers a few city blocks.

Some of the architecture in the wats is distinctly different from what you find in Bangkok.
All sorts of bugs and small critters are on the menu. Including silk worms and crickets.
A one day hike into the mountains got us riding an elephant and visiting a Hmong and Karen village. We also went bamboo rafting, which was hazardous to say the least.
